Egg plants with black bean sauce

Ingredients :
_2 egg plants
_1 cup of Coco Rico juice
_1 tablespoon of sugar
_ one and one half tablespoon of light soy sauce
_1 tablespoon of chopped, minced garlic
_1 tablespoon of chopped, minced ginger
_1 tsp of tapioca starch
_1tsp of vinegar
_1 tablespoon of bean paste ( of smashed fermented black bean)
_1 tablespoon of chili sauce
_1 stalk of green onion

_cut egg plants into long, small strips and soak them into water with 2 tsp of salf for 2 mins
_mix soysauce + sugar+ vinegar in a bowl and set a side
_steam egg plants for 10-15minutes
Heat the wok --> add one and 1/2 teaspoon of oil , stir fry the garlic and ginger until you smell the aroma, add in the bean paste and chilli sauce, saute for one minutes, then add  steammed eggplants into the wok, plus the sauce moxture and coco rico juice, , stir fry for 3 mins under small heat with the lid covered
mix the tapioca starch with 1 tsp of water and pour into the wok to thicken the eggplants

After that , sprinkle the green onion , stir well
This dish is served hot with steam rice

I told myself to write more and keeping updated with my online journal ; but it seems like I failed again,
This is my first entry for the year of 2012, 
My new year resolution would be : writing as much as I can, taking pictures as much as I want, traveling as much as I like and reading whenever I have the time left, 
2011 already ended, and I am so glad that it was over. Life is tough, and it never go the way I expected, but there is a line from a song that i've heard somewhere : things do not kill you will make you stronger.
I feel grateful for the things I have been through ; they sure bring you down, haunting your mind, and yet , they just make you grow wiser and appreciate what you have.

mình chuyển đến nhà mới cũng đã hơn 1 tuần, mấy năm nay, mỗi năm lại chuyển chỗ một lần, thiệt cứ như dân du thủ du mục, chẳng có nơi nào cố định,
hôm qua trên đường về nhà, đáng lẽ phải đi thẳng về chỗ ở mới, mình lại rẻ trái, như là thói quen, rẽ trái đối với mình đã là thói quen, nó đi vào tiềm thức, nên bất thình lình thay đổi thói quen là một việc phải tập dần với sự thích nghi của nó
Cũng giống như những chuyện tình cảm, duyên phận, nếu như hàng ngày đã quen với thói quen sáng dậy sớm nhận tin nhắn, nói chuyện hàng ngày với một người đó, quen sự hiện diện của họ, quen giọng nói của họ, quen nụ cười của họ, nó cứ dần dần đi vào cuộc sống của mình, và rồi bất thình lình nếu như bắt mình bỏ thói quen của mình, cảm giác mất mát , hụt hẫng là lẽ thường tình và rồi phải bắt mình dần dần thích nghi.

It has been more than 3 years since the last time I visited Santana Row. The place is still the same, just the people come and go, including me.
Santana Row is a high-end luxury shopping center. There are so many high end store : Gucci, Burbury, Ferregamo, and I do not have to worry about spending money because I can only do window shopping. :).
It is a nice place to walk around on a sunny day, sit at an outdoor restaurant and enjoy your flavored coffee, and look at people walking around.
It is a place for me to escape from the suburban area, ease my stress and lift up my spirit.







When I was taking this picture with my big glass, a little girl came up and asked me : "Are you a photographer" I just smiled : No dear, I just love taking these peaceful moments and keep them in memories

So this is my most favorite vietnamese dish, I normally do not make it because it consumes time and effort. The noodle is made from tapioca flour giving u a final chewy texture. The stock is a combination of Napa Cabbages and Beef bones. So below is my recipe, remember it takes time to make it

Ingredient
  • 2 pounds of beef bones
  • 1 pounds shrimp
  • 1 Atlantic Spanish Mackerel
  • 1/2 pounds of fish paste
  • a jar of pork paste
    Pork and fish paste

  • sweet basil, green onion, garlic, and shallots, lemon
  • 6 or 7 big leaves of Napa cabbages

  • 4 packages of tapioca flour
  • sugar, salt, pepper, fish sauces,
1. Stock :
Rinse beef bones under hot water, and put them into a big pot, let them boil a little , then pour the water into the sink to remove the fat and foam. Rinse the beef bones again the second time
Rinse 6 or 7 big leaves of Napa Cabbages
transfer Napa Cabbages and beef bones into a stock pot
Add about 1 gallon of water into the pot
Place the stock pot on a stove and turn the heat to high, ( add 3 tablespoon of sugar, 1 teaspoon of granuated chicken soup base mix, 1 tablespoon of salt, 1 tablespoon of fish sauce into the stockpot), let them boil ( you can adjust the seasoning depends upon ur flavor) for half an hour. While the stock is boiling, u can remove the foam floating over the top until the stock is clear with no foam.



2. Fish paste

Atlantich Mackerel : fillet the Mackerel , remove the skin and bones, and only take the meat portion, chop and grind the fish meat.
Chop 4 gloves of garlic and 3 gloves of shallots
Clean the shrimps, remove the heads, peels the shells, chop and grind them until they turn into shrimp paste

Mix the shrimp paste, pork paste, fish pastes , garlic, shallots , pepper, 1 tablespoon of sugar, 1/2 tsp of salt, 1/2 tsp of fish sauce, 1/2 tsp of chicken soup base, again the seasoning depends upon ur preference)
mix them well again with clean hands.





Heat a pan with vegetables oil, and fry the meat mixture until it turns into a yellow, golden colors

Also in order to make a meat balls, use a wet spoon to scoop and drop it into the hot stockpot, wait for the meatballs to float over the top, do not over cooked the meat balls, otherwise, they will become tender,

3. Tapioca noodles
This is a part that consumes quite a mount of time and requires ur patience, :)
Boil 2 cups of water
pour 3 and 1/2 packages of tapioca flour into a big bowl ( save 1/2 packages of flour for dusting and prevent the noodles from sticking to each other)and then pour half of the boiled water over the flour, please be careful, its hot !!

Knead the powder into a smooth dough using enough water.
Lightly dust the work surface with dry flour, lightly dust your hands and rolling pin.
Position your rolling pin in the center of the dough and flatten the dough out,
then cut the dough into a a thin slices


In a boiled hot water, soak the tapioca noodles and wait for them to float over the top , and remove them from the hot water, add the soup along with sweet basils, fried meat, green onions, and some drops of lemon and u are ready to eat.


Sweet basil makes the tapioca noodles taste delicious, It is an important ingredient, Do not forget :)

hôm trước nói chuyện với Stephen W.Oachs, ( nhiếp ảnh gia chuyên nghiệp về thiên nhiên và đời sống hoang dã) , ông này cái phòng tranh của ổng là bộ sưu tập hơn 10 năm ổng lăn lộn trong nghề, có nhiều cái ảnh ổng phải quay trở lại vào nhiều dịp khác nhau trong năm tùy vào điều kiện thời tiết và khí hậu để có bức ưng ý nhất
Nhìn phòng tranh của ổng mình nói :
wow, mấy bức này đẹp quá, ông thật sự rất là có tài

I used to think love will eventually fade away when the two people live together for more than couple of decades, when one person knows the other two well including emotional expression and physical features. But today, in the hospital, they proved me wrong. I cried my heart out , yes, cried my heart out to see how caring the husband and the wife have for each other.

She was a 70 years old woman, she was in her end stage renal disease with pneumonia and pulmonary embolism, with history of diabetes and sleep apnea.
He was a 72 years old dearest man who has Atrial fibrillation, and history of cardiac attack, and is the main caregiver for her at home and during the time she got admitted to the hospital. He is worried for her all the time, asking us so many questions whether or not she will be fine, will she be okay to be home with him.

And when she eventually gets better, he on the other hand, got heart attack due to worrisome, and even he is in another floor, still keep worrying about her, worries if she get discharged before him then there will be no one taking care for her

When she gets better, she is in different floor, asking us about him, weather or not if he is fine, whether or not he is still around so she can kiss him everyday until she is 100.

I walked out of the room, crying my heart out,

Tomorrow I will see u so that I can say : both of you will be home

1, leave cellphone at home, yet, it's a good idea, sometimes I feel like I become more and more dependent on my cellphone, keep checking my cellphone every single minute to see if I miss any call from someone, hmm, tomorrow, leave the cellphone at home, free myself,
2, find a good place to have a cup of coffee and enjoy the day ( a one fine carefree day)
3, catch any good movie out there
4, having my hair cut, ( Still debating what style ,,, any good picture or recommendation, really appreciate, my hair is quite long now)

I am sick , just some symptoms of a common cold,but these days because of the swine flue pandemic, and several cases of swine flu have been found in LA, California, so everyone in my family is so paranoid, asking me a lots of questions, like do you have cough, do you have fever??..
and eventually I am getting confused whether i have flu or a cold,
okay, I have runny nose, mild fever, mild coughing, sneezing alot, I feel sleepy in the afternoon, but no body-fatigue syndrome,
so cold or flu?????? AHHHHHHHh

if you happen to travel to Northern California, the first place where the Northern Californian suggest is San Francisco,( with all of the hype about Golden gate bridge, Fisherman Wharf, Lombard street), ..
The funny thing is : even though I live in Northern California, but I am not familiar with all the locations, all the streets, and have no idea where to hang around or have fun in the city. so just want to inform you ahead of time that I am not a good tour guide , lolz

well, i enjoy cooking, but I enjoy taking pictures of food even more,
i am off today, no work, no stress, mom bought me a slice of salmon, she loves me so she knows I love salmon, (if you love me, you will also know that I love salmon , lolz ),
with some teriyaki sauce, some brown sugar, some olive oil , let the salmon sit in the mixture of the seasoning for 2 hours, and you are ready for the grill

and there, a small, special cup of tea, a gift I received from my so at Japanese tea garden in San Francisco
my rubik cube ,as you can see, i am halfway to complete it, ( the two bottom layers are done)
my sudoku book
and the last, but not least, my outdated 3 and a half -year old laptop which I am thinking to replace it with another one, still undecided, any idea???
