Egg plants with black bean sauce

Ingredients :
_2 egg plants
_1 cup of Coco Rico juice
_1 tablespoon of sugar
_ one and one half tablespoon of light soy sauce
_1 tablespoon of chopped, minced garlic
_1 tablespoon of chopped, minced ginger
_1 tsp of tapioca starch
_1tsp of vinegar
_1 tablespoon of bean paste ( of smashed fermented black bean)
_1 tablespoon of chili sauce
_1 stalk of green onion

_cut egg plants into long, small strips and soak them into water with 2 tsp of salf for 2 mins
_mix soysauce + sugar+ vinegar in a bowl and set a side
_steam egg plants for 10-15minutes
Heat the wok --> add one and 1/2 teaspoon of oil , stir fry the garlic and ginger until you smell the aroma, add in the bean paste and chilli sauce, saute for one minutes, then add  steammed eggplants into the wok, plus the sauce moxture and coco rico juice, , stir fry for 3 mins under small heat with the lid covered
mix the tapioca starch with 1 tsp of water and pour into the wok to thicken the eggplants

After that , sprinkle the green onion , stir well
This dish is served hot with steam rice
